Dr. Zachary Gersten is a Postdoctoral Fellow in the Department of Nutrition, University of California, Davis. He is broadly interested in understanding the role of food diversity in food systems and its influence on dietary patterns, consumer food demand, and nutritional status. Zachary also conducts research on developing data collection tools for emerging nutrition topics, including fermented food consumption and nutrition on social media, as well as best practices for public health nutrition teaching and learning. Dr. Gersten received his PhD in Nutritional Sciences from the University of Michigan and his MPH from Boston University. Prior to joining UC Davis, he was a Research Scientist in the California Department of Health Care Access and Information and a Research Nutritionist in the Agricultural Research Service of the United States Department of Agriculture.
