Yuki is an incoming PhD student in Exercise and Nutrition Sciences at Baylor University and recently completed her M.S. in Human Nutrition at Texas State University, where she served as a Graduate Research Assistant studying metabolic disease prevention, cancer disparities, and the gut microbiome. Prior to pursuing research in the U.S., she spent more than a decade as a clinical dietitian in Brazil, providing evidence-based nutrition care to patients with cancer across hospital, chemotherapy centers, and palliative care NGO. At ASN 2026, she is honored to present her abstract, highlighting research on the effects of fructooligosaccharides on insulin and GLP-1 profiles and colonic signaling pathways in a mouse model of diet-induced obesity. Her long-term research interests focus on improving metabolic and cancer outcomes through nutrition- and lifestyle-based interventions.
