Ruyu "Ru" Liu is a postdoctoral research associate in the Department of Health and Kinesiology at the University of Illinois at Urbana-Champaign. Her current research focuses on a school-based summer camp intervention integrating nutrition education, lutein-rich foods, and physical activity targeting children from underserved communities. She also conducts research in the areas of school meals, carotenoids, and metabolic and cognitive health. Ru obtained a PhD in Community Nutrition from Cornell University, where she investigated nutrition interventions in the charitable food systems in the U.S. using mixed methods and evidence synthesis. She has an MS degree in Nutritional Sciences from the University of Illinois at Urbana-Champaign and is also a registered dietitian.
