Dr. Cao is a biomolecular nutrition scientist with expertise in the metabolism and function of phytochemicals, as well as the regulatory roles of bioactive components derived from medicinal herbs and functional foods on vitamin and mineral metabolism. She earned her doctorate in molecular nutrition from The Hong Kong Polytechnic University and completed postdoctoral training at Purdue University and The Ohio State University, where she investigated the effects and underlying mechanisms of herbal medicines and functional foods in regulating the metabolism of bone-protective minerals and fat-soluble vitamins in both animal models and human studies. As an adjunct faculty member at San Diego State University, Dr. Cao leads clinical and preclinical research utilizing calcium isotopic techniques to examine factors perturbing calcium metabolism. She is currently a Senior Associate in Medical Communications at Mead Johnson Nutrition, where she focuses on generating and effectively communicating scientific evidence on infant formula to a broad range of stakeholders.
