Kenny Mendoza holds a PhD in Nutritional Epidemiology and a Master of Biostatistics from the Harvard T.H. Chan School of Public Health. He also earned a Master of Nutritional Science from the Mexican National Institute of Public Health (INSP) and a BS in Nutritional Sciences. He is currently an Assistant Professor in the Department of Epidemiology at the Peter O’Donnell Jr. School of Public Health at UT Southwestern Medical Center. Kenny’s research integrates epidemiologic data, dietary assessment, and metabolomics to examine how nutrition and food processing influence the risk of type 2 diabetes, cardiovascular disease, and obesity-related cancers. He also conducts research to inform eHealth strategies in public health nutrition, with a focus on regulating influencer marketing and the promotion of unhealthy foods on social media.
