Ph.D. student in the Food and Nutritional Sciences programme at The Chinese University of Hong Kong. Research focuses on the physiological functions of carbohydrates, particularly type 5 resistant starch (RS5) complexes. Work centers on elucidating how these dietary components modulate the gut microbiota and its metabolic products, thereby influencing host metabolism and ameliorating chronic diseases. Findings have been published in Carbohydrate Polymers and Food Chemistry.
