Chelsey Fiecke, PhD, is a postdoctoral fellow in the Department of Pediatrics at the University of Arkansas for Medical Sciences (UAMS) conducting research at the USDA-ARS Arkansas Children's Nutrition Center (ACNC). Her work integrates clinical nutrition research, metabolomics, and characterization of food composition to optimize maternal and child cognitive and cardiometabolic health trajectories. Her goal is to identify targeted nutrition intervention strategies for the first 1,000 days of life (pregnancy through 2 years of age), with a particular focus on understanding the contribution and mechanisms driven by dietary bioactives. Ongoing collaborative projects also include evaluating relationships between prenatal diet quality and cognitive development in infants and toddlers, phytochemical intakes and allergies in children, identification of dietary phytochemical metabolites that are predictive of cardiometabolic outcomes in adults, and understanding relationships between cardiometabolic programming and bioactive composition of human milk.
