Kari graduated with a B.S. in Dietetics from New Mexico State University in 2023. Her involvement in various microbiology labs during her undergraduate years fueled a growing enthusiasm for research and the intersection of nutrition and microbiology. Now, she is pursuing her PhD in Nutritional Biology at UC Davis where she studies the relationship between dietary fiber, the microbiome, and metabolic syndrome.
