Nutrient-rich dairy foods such as milk, cheese yogurt and kefir - across a range of fat levels - are components of healthful eating patterns that have been associated with improved cardiometabolic health. Growing evidence suggests these benefits cannot be explained by individual nutrients alone, pointing instead to the dairy food matrix and the complex interactions among milk fats, high-quality proteins, essential micronutrients and bioactive components. This multidisciplinary panel of experts will examine the state of the science on the health contributions of dairy foods, with a focus on proposed mechanisms linking dairy consumption to outcomes related to growth and development and reduced risk of chronic disease. Panelists will explore emerging insights on food matrix science and fat flexibility and discuss how this evidence can inform population-level guidance, clinical nutrition practice and future research across the lifespan.
