With growing emphasis from the National Institutes of Health on human-based research technologies, organoid models are gaining traction as powerful tools. Derived from stem cells, organoids recapitulate key features of human tissues and enable mechanistic insights with translational relevance. This session will include abstract presentations and featured talks highlighting applications of organoid-based models in nutrition research, with a focus on emerging approaches and opportunities for trainees and early-career investigators.
