Or Avishai Ofer is a clinical dietitian and PhD candidate in Biochemistry, Food Science and Nutrition at the Hebrew University of Jerusalem, and an affiliate of the Global Food Research Program at the University of North Carolina at Chapel Hill. Her doctoral research examines nutrition policy, food environments, and consumer decision-making, with a focus on how front-of-package labeling and other packaging elements influence attention, perception, and food choices in real-world food-purchasing contexts. She uses in-store eye-tracking in supermarket settings, package content analysis, and product-level market data to study how consumers encounter and interpret nutrition information at the point of purchase.

Her work has been presented in international nutrition and public health forums and contributes to policy discussions on the design, implementation, and evaluation of front-of-package labeling systems. Bridging clinical nutrition and public health research, Or is interested in the role of dietitians beyond individual counseling - particularly in identifying environmental barriers to healthy eating and contributing to evidence-based nutrition policy. Looking ahead, she hopes to apply this perspective to nutrition research for complex chronic conditions, with a particular interest in connective tissue disorders such as Ehlers-Danlos syndrome.
